Cooking, eating, running

I know this isn't a big deal for a lot of you. But it is for this overwhelmed working mom.

I didn't eat restaurant food once this week. I did rely on several frozen meals and frozen veggies, but anything is better than drive-thru. No fast food for me!!

I have been cooking, too. I rediscovered Roni's food blog greenlitebites.com, and I am in love. I have made a lot of her recipes the past few weeks, and not one has been a dud. The raspberry stuffed peaches are divine. I just had the chick pea/cilantro/feta salad, and it was fabulous.

There are so many great things about her recipes. Not too many ingredients. Serving size for 4 or less (I don't need a lot of leftovers). Quick and easy to prepare. Nutritional data included. Comments from readers with their tips and tricks. And they are yummy and healthy.

I don't know why she doesn't have a cookbook yet. I just hope she never stops writing new recipes.

I've run 3 times this week-- yay! Long run of 7 miles planned for tomorrow. Hopefully I can do it.

It's been a good week.

Great. I like Roni's recipes too. A cookbook would be great. Maybe after she has the baby . . . Great job on the running and on the cutting out eating out. That makes a big difference in how I do.

does the feta trigger sophie? it took me a long time to realize it did me. I had a habit of eating it in salads that also contained nuts. I thought it was the nuts. Have to stay away from any of that type of cheese.

Yay!! So glad you are doing well! And hey, us overwhelmed working moms gotta just do the best we can - and sometimes that means frozen meals. I totally understand you on this one!

I need to rediscover Roni too. The hubs and I have very different ideas about meals - he like hearty meat and potato meals whereas I like chicken and couscous (something light). Usually I just make what he likes, but dangit I get tired of the same ole, same ole!

I really need to start working out again. Hearing about your running makes me think I need some cardio in my life!! :)
